Detailed descriptions of each offering :

Zwanze 2024 - A little over a year ago, [Cantllon was] in Brittany to submerge a few dozen bottles of Gueuze in the sea. In collaboration with Sylvain, an abalone farmer in Finistère, these bottles continue to ferment at a depth of 10 meters in the company of his charming creatures. To feed them, Sylvain brings up the cages every month to add various types of algae for the mollusks to feed on. [They] tasted these same algae in tartare, and the idea came to try them in maceration with Lambic to create a connection between the brewery and Sylvain's company. After several attempts, it turned out that seaweed, specifically the sea lettuce, gave the best result. The beer is, of course, very different from the fruity, vinous, or floral tastes traditionally found in [their] products. This Zwanze 2024 exudes aromas of exotic fruits; its taste has notes of iodine with a slightly salty side reminiscent of oysters. In short, a beer quite different from what [one is] used to discovering at Cantillon, a true Zwanze!

Saint Gilloise - Two-year-old lambic in which fresh HallertauMittelfrüh hops have been soaked. A perfect balance is struck between the lambic’s natural acidity and the Hallertau hops’ refined bitterness.

Gueuze - Blend of lambics produced during different years. Beer with a slightly acidic and fruity taste, delicate and woody fragrance and a dry finish that lingers on the palate.

Vigneronne - Blend of lambics aged on average 16 to 18 months and of organic Viognier grapes. Viognier grapes make Vigneronne a delicate and very refreshing beer that, due to the fructose, is slightly less acidic than other Cantillon beers.

Saint Lamvinus - Blend of lambics aged on average 16 to 18 months and of Merlot grapes. The year’s blend, bottled November 2022, was exceptionally made with Merlot (55%), Grenache Noir (35%), and Syrah (10%). Lambic can be rightly considered the missing link between the worlds of wine and beer, and Saint Lamvinus takes this one step further by adding grapes normally intended for wine production. Intense, fruity beer that lingers on the palate and has a clear connection to its winemaking origins.

Kriek - Blend of lambics and sour cherries - 200 g of cherries per litre of beer. Beer with a slightly acidic taste of red fruit complemented with subtle almond flavours. Kriek brings out its maximum “fruitiness” when drunk young. With age the lambic will take the upper hand, but this is at the expense of the fruit component.

Sang Bleu - Lambic blend with blue honeysuckle, or haskap, berries. For the past two years, [Cantillon has been] been making a fruited blend with Camerise berries in small quantities. These berries are slightly sweet with a beautiful acidity. [They] didn’t have to look very far for its new name... a blue fruit that makes a blood-red beer : Sang Bleu.

Magic Lambic - Magic Lambic Cantillon is a blend of Lambic with 80% raspberries, 20% blueberries and vanilla. This cuvée was originally created to support the Magic Land Theater in Schaerbeek, which was in danger of closing in 2018.
